Sous vide egg bites

35C9E4F5-4BF4-4D89-A261-1AEE97E57BF5I don’t know about you but its become a bit of a habit to pull through Starbucks for some of their red pepper egg bites. Seriously, I love them.. and i love the fact that they are somewhat healthy, a quick filling  breakfast or snack. 🙂 But hey at over $4.00 a serving I may just need to try to make some at home.

Honestly, the sous vide thing through me off, I had no idea what that meant. After reading and doing a little research what I found was a little confidence and a ok, you can do this!  Pretty much it means low temperature, long time cooking where food(pan) is placed in a water bath. I actually used mini muffin pans and placed it in a larger pan filled halfway with water. I set oven at 325.

I followed the recipe below but you can add whatever favorites you like to yours. I was actually surprised at how close they came out to the original. I store mine in a container in the refrigerator because we will go through them pretty fast. I always heat them with a paper towel under them to absorb any water. Happy to report this will save us a little money! 🤗

  • 1 tbsp olive oil (to grease egg tray)
  • 4 cups egg whites
  • 1 cup roasted red peppers, diced
  • 2 cups spinach, finely chopped
  • 1 cup mushrooms, chopped
  • 1 cup Monterey jack cheese, shredded
  • Fresh parsley, to garnish
  • Salt and pepper
INSTRUCTIONS


  1. Preheat oven to 325 F.
  2. Fill a baking dish halfway with warm water. Place a greased 24 mini muffin pan into the waterpan.
  3. Divide toppings of choice and cheese among egg cups, then fill the rest of the way full with eggs or egg whites.
  4. Bake in the oven for 30-40 minutes or until eggs are set.
  5. Remove egg bites from molds once cool.
  6. Salt and pepper
  7. Serve and enjoy!

Colors and Emotions

I was somewhat surprised in that my dominant color and my accent color say so much about me. For example, my accent color is all the orange hues. I am drawn to that color. I also, at times, lack courage and confidence… hmmm.. just being real! My dominant colors are blue/ navy….Tranquility and security make me feel safe and taken care of. Which also fits so well with my enneagram type-7. I mean..🤓

As we decorate our homes and choose colors it is so important that we choose what we love, what appeals to us. What makes someone else happy, may not have the same affect on you! 🙂 BE YOU!

Taking it one step further I thought about hospitality. I love opening up my home. My Mom modeled it for me and my sister as far back as I can remember. She did it all with such ease and grace. She could put a meal together in no time flat and somehow pull off a great night, most often on a moments notice.  Our homes do not have to be perfect for us to be hospitable. We just need to be willing!! Something special happens around the table, something that touches the heart.

Adding the elements of color to brighten and enhance your space is just another way to love on your guest. Color speaks.. at least thats what I have been learning.

Art is an extension of you. Buy what you love.. something that speaks to your heart. Bonus- ART DOES NOT NEED TO PERFECTLY MATCH YOUR SPACE!  It enhances..

Heres my top three decorating/art tips.. I do not claim to have all the answers but through trial and error these three have worked for me.

1- start with a  neutral pallet.. if your not sure white is good. (Color and texture is added with pillows, rugs, art, etc.)

2-Never start with a piece of art. Purchase art to compliment a space. Use art to tie a space together or bring an unexpected element. Sometimes this may introduce a new color that is not in your original plan. This is good! Just a touch.. 🙂

3. Purchase art that evokes an emotion/feeling. This could be a painting of a place, a favorite or memory. Abstracts are most certainly a conversation starter… they bring color as well as emotion.. Buy with your eyes..and your heart.

Brown- friendly, conservative, longevity

Purple- royalty, luxury, ambition, wealth

Pink- healthy, happy, feminine, sweet, playful

Silver- glamorous, sleek, graceful

Gold- wisdom, prosperity, valuable

Gray- security, reliable, solid

White- goodness, purity, fresh, clean, innocence

Black- protection, elegance, classy, formal, sophistication

My sister gave maybe the best -word- i think I’ve ever been told.. I think the reason it resonated within me is I knew it was true.

She said this..”The only person standing in your way…is you!”  Ouch!  Maybe I’ll blame it on my enneagram type..

For the longest time I have wanted to offer more than art on my Instagram/ Blog etc. Fear has held me back, “What will people think?”  “They all are laughing at you…”  all. those.thoughts. Quite honestly I am a professional -nothing -but I have lots of other interest, art is just one of them. God has used art and continues to in my life. I’m not giving it up, I love painting! I’m just stepping over my insecurities and incorporating more things that I enjoy. Ive dabbled in it here and there but until I commit there will always be an easy way out.

Instagram has been somewhat of a struggle for me. Unless you have over a few thousand followers you are really considered “dead”. This is my second dance with Insta. I deleted my first account out of sheer obedience. Ill explain that another day.. After a period of time I felt the freedom to start all over, and I did.  I’ve learned a-lot about myself through this process and a lot about God. He doesn’t need my instagram account to sale my art. I actually sold more art than ever last year with only a whopping 450 followers! It is His, not mine.

Do I crave popularity? No. Popularity is deceitful. We can all go back in our minds to high school and understand that.

Do I want to be noticed?  No. I just love sharing what i love, find and enjoy. If it helps you..  then its a win for me!

What will this change look like? I have no idea! 😂 I am taking it day by day, baby steps.

Am I trying to make this my profession? A part of me says yes and the other says no. No is the fear. Honestly,  Things have shifted a little in my personal life(which at some point I pray I can share with you) which has challenged me go after ..IT.

So I say all this to say.. I would appreciate your support, but if it isn’t your thing, please don’t judge me. God knows my heart and He knows the whys and the secret reasons. I am ready to tackle this once school starts.. For now, i will enjoy these last few weeks with my crew.

What will I be sharing? Every. Thing. from new art and the process, shopping, recipes, Sunday lunches at home(because you can), to my favorite beauty products……Me on a budget.  And what I enjoy.. because at 45, it’s time.

Yes! I know that sounds strange but maybe it got your attention. What does it all mean? If you will hang tight I’ll try to explain it the best way I can.

A few years ago as I embarked on this art journey I found myself in search of all I would need to create “the” piece that would fit my visual ache.  I knew what I wanted it to look like but I didn’t know what I would need to achieve it.

I found myself searching and suddenly standing in the aisle at Lowe’s. I left that day with a bucket of vinyl spackling in hand without a clue as to how it would work, or how God was about to use it.

#Getspackled is my story.. my challenge to you. Sharing how God took the elements of art and transformed my heart, all while creating with you.   My hearts desire was to create, I had never intended to open my mouth and share. But God…

He began to strengthen my heart and doors began to open for me to be in front of people.. women. I had opportunities to share and as I did my heart grew. It grew in ways I did not expect. You see, I never saw myself worthy of speaking in front of a group. I always said there was a strange disconnect between what I was thinking and how it actually came out of my mouth. Most recently a very wise friend said, “ but when you are talking about Jesus and what He’s doing, it takes all the pressure off, you’re talking about him and not yourself.” Freedom

So this new year,  2019,  brings excitement in what’s to come. My first speaking/creating date is in February with over 100 women. I’m asking God to go before me and “do exceeding, abundantly above all I could ask or imagine..”

Our Favorite Banana Bread

3/4 cup (1 1/2 sticks/6 oz/170g) unsalted butter, softened
1 (8-ounce) package cream cheese, softened
2 cups granulated sugar
2 eggs, beaten
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed bananas (about 4 medium bananas)
1 teaspoon vanilla extract
Instructions:
Preheat oven to 350 degrees F (180 C). Grease and flour two 8 x 4-inch loaf pans, or line bottoms of pans with parchment paper and spray paper with nonstick cooking spray.In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating just until combined.

Combine flour, baking powder, baking soda and salt; gradually add to butter mixture, beating at low speed just until blended. Stir in bananas, pecans and vanilla. Spoon batter into prepared loaf pans.

Bake in preheated oven for 60 to 70 minutes, or until a toothpick or wooden skewer inserted in the center comes out clean and sides pull away from the pan. If necessary, place aluminum foil over breads the last 15 minutes of baking to prevent over-browning.

Cool bread in pans on wire racks for 20 minutes. Remove from pans (and if you used parchment paper to line pans, remove paper) and cool breads

SECRET GLAZE THAT MAKES IT!

3/4c powdered sugar

just enough orange juice to make a glaze like consistency! I like to take a fork, poke holes and pour over! 🙈❤️But oh so good!!
